Swiss Chard Rainbow has got many different coloured stems and leaves. Closely related to beetroot but has a small inedible root and grown for its attractive and mild flavoured leaves. The leaves can be harvested as baby leaf or fully grown, and can be treated as a cut and come again crop.  Young, tender leaves are eaten fresh as a salad green, or mature leaves can be cooked like you would cook spinach, steamed, boiled or sautéed in a little butter. Start cutting the leaves when about 10 cm tall, can be cut 4-5 times a year and the colour intensifies in cooler weather. One of the most popular vegetable in the Mediterranean, Swiss Chard contains at least 13 different polyphenol antioxidants, which makes this leaf vegetable very healthy and nutritious.

Sowing & Growing

Sow directly where it is to crop in spring as soon as the soil can be worked. Sow thinly 10mm deep, 5cm spacing in rows 45cm apart. Germination takes 13-17 days. Keep watered if conditions are dry. When large enough to handle thin to 15-25cm spacing. If you thin when plants are approx. 15cm high you can use the thinnings as a salad leaf.

Water regularly as this reduces bitterness. Easy to grow. Keep weed free. If flowers develop remove to extend the growing period.

Harvest baby leaf regularly by selecting a few leaves from each plant to promote fresh growth and to extend cropping season. For mature leaves allow leaves to get as large as you wish, but before they begin to wilt. To extend harvesting beyond first frosts cover crop with a cloche.
