Sowing & Growing
Growing parsnips is a straightforward and rewarding endeavour, with the added delight of enjoying them fried, roasted, or stewed. These roots can endure winter in the ground and freeze well. For outdoor cultivation, sow parsnip seeds thinly from February to May directly into finely-prepared, light, and fertile soil that has been adequately watered. Plant the seeds 1.5cm (½”) deep. Maintain a spacing of 40cm (16″) between rows, and early sowings may benefit from cloche protection.
Expect seedlings to emerge within 14-32 days. Thin the plants to 20cm (8″) apart, replacing any dislodged soil. Ensure thorough watering until the plants are established. The roots can be left in the ground until needed, improving in flavour after exposure to autumn frosts.
Harvest parsnips from October to February.
